The growing point meristem is stretched out in a line instead of being just a single point.
 
OOH ok see now. I have has some different plants like that. Always thought it was a bad thing... lol
 
Until recently, I had a plant of Pinguicula rectifolia with a crestate growth pattern. I thought it was the ugliest plant in my collection. I uprooted it and used all the leaves for propagation purposes. Good riddance.

I almost wonder if the apical meristem is mutated/mutilated in these crestate forms due to mite damage that takes place before it ever becomes apparent to us.
