For the 4th of July holiday weekend

Just put these on, should be done in about 20 hours...
Have about 20 ppl to feed tomorrow

Prepped last night with my dry rub:

a week or so ago, I had the chance to get some fresh sockeye salmon....

Butch, you're killing me . . .

Tonight was a pizza with porcini mushrooms -- some cepes that had been collected and frozen, from a friend's land some months back; his biggest harvest in years; that, and a few glasses of dago red. As my grandmother used to say, "All mushrooms are edible, but there are some you only eat once . . ."

Fortunately I only have to cook for 2 today. Should have gotten a pic before they went on, but I didn't. Here's a small rack, about an hour and a half in. Being cooked at about 180 over an apple wood fire. Screw that fancy store bought charcoal! 5 or 6 hours to go to.......

No fancy grill for me. I made a smothered pork roast tonight simple easy and delicious! :)
