Looking for a fan timer with temperature control settings

Basically I'm in need of a fan timer with a temperature sensor that can switch on/off an exhaust fan once certain temps are reached. Does such a product exist?

Sure, try a programmable furnace/ac thermostat.

I use a hygrotherm made by zoomed. Check it out. It's not that expensive and controls the temps, humidity and has an nighttime temperature drop feature. I've had mine for almost 3 years now, and love it.

If you're talking greenhouse exhaust fans you can buy them with thermostats built in.
