Black is the color you want for seedpods, before cutting stalks. And dry is the way you want to deal with them. If you have small plastic cups you could take a few pods per cup and leave exposed to the air to dry. Eventually, the pods will release the seeds. You could also package a few pods in folded paper (Where's that post that Wicked Thistle wrote about folding the paper?) and ship to others. I have plastic centrifuge tubes that I put atlks in, opened. Then I put the cap on and shake to extract the seeds.
