Hmmmm. The water might be a problem. If it's 'softened' water then it will still have mineral salts in it that will build up in the soil and damage the roots. If it's bottled water like from a water cooler then it's possible that it's RO water and that works well. Just let it warm up to room temp before watering your plants.
If the peat is just plain peat, the plants will be OK but I have trouble with it compacting and getting hard in my pots. Perlite or silica sand mixed in will help keep it loose longer. Also, make sure the peat doesn't have fertilizer added to it. Carnivorous plants have very sensitive roots and fertilizers burn them quickly. They grow in places that have very few nutrients on the soil.
If the leaves start growing long and skinny, then you need to increase the light your plant is getting. VFTs are very light hungry plants. They like 5 to 8 hours of direct sun but will do fine if the fluorescents are bright enough.
