i was wondering if i should sow the seeds i bought now or put them in the refrigerator and sow then in the spring time.

The longer you wait before sowing the seed, the less likely you will be to experience successful germination. Despite storage conditions VFT seed, like most seed, loses viability over time.

how old are the seeds (usually) that come from online retailers?

No way to be sure. No visual markers to determine their age.
